Banana Banana Bread (with Chocolate Chips)




Zac came over today and yelled to see if I was home; he'd brought three overripe bananas and wanted to make banana bread with me. We found a recipe online and set to work. The recipe didn't call for them, but we decided to add chocolate chips. The bread turned out wonderfully, I wish I could eat it all while it's warm (microwave, here we come). Here's the recipe:

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup butter
  • 3/4 cup brown sugar
  • 2 eggs, beaten
  • 2 1/3 cups mashed overripe bananas


Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
  2. In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.
  3. Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.

P.S. It doesn't look like anyone's read this post yet, so I'll just add onto it instead of making a whole new one for this little bit. I made spaghetti for Mel and me for dinner, and we used up one little can of sauce between us. Later I was hungry again, and there were still some noodles, but no more spaghetti sauce unless I wanted to open a new can. So I heated up a sauce pan, poured in some cream, added white cheddar to melt, and shook in a good bit of pepper and onion powder, then poured all that over my pasta. Yum. I can't believe I made up something that tasted that good :)
