Here you go!

Cheesecake:
Graham Cracker Crust: 8 graham crackers, 1/4 cup sugar, 1/4 cup softened butter, 1/4 tsp cinnamon. Put crackers in large Ziploc bag, and beat them to a pulp (or until small crumbs). Mix all ingredients together in medium bowl w/ fork or pastry blender. Using back of large spoon, press crumb mixture firmly inside 9-inch pie plate to form a crust

Cheesecake Filling: 8 oz. Cream Cheese, 1/2 cup sugar, 1T lemon juice, 1/2 tsp vanilla, pinch of salt (1/8 tsp), 2 eggs. Mix cream cheese and sugar in large bowl with electric mixer (if have one). Add lemon juice, vanilla, and salt, continue to mix until well blended. Add one egg at a time making sure the mixture is well mixed. Pour the mixture into the prepared crust. Bake at 325 degrees for 30 minutes. Check to see if done. If not, continue baking at an additional 5 minutes until firm.

Topping: 1 cup sour cream, 2 cups sugar (or more if needed), 1/2 tsp vanilla. Blend together well and then pour on top of cooked pie filling. Bake for 10 minutes longer or until done.

Orange Julius: 1 6oz. can of frozen orange juice concentrate, 1 cup milk, 1 cup water, 1/4 cup sugar, 1 tsp vanilla, 10 to 12 ice cubes (add gradually). Mix all the ingredients in an electric blender. Beat until frothy. Drink and enjoy.

Fruit Yogurt Whirl: 6oz. frozen Guava/Strawberry concentrate (Hawaii's own), 1/2 cup water, 1/2 cup milk, 1 8oz. vanilla yogurt, 1 1/2 tsp vanilla, 1 container frozen strawberries OR 1 1/2 cup fresh strawberries, 1 banana. BLEND IN BLENDER. After mixture is smooth, add 1 cup ice cubes, one at a time. Blend more until tasty.

Pie Crust: 3/4 cup and 2 Tbsp flour, 1/3 cup shortening, 1/2 tsp salt, 3-4 Tbsp ice water. Preheat oven. Sift flour and salt together. Cut-in shortening w/a pastry blender or two table knives. Add water 1-2 Tbsp at a time, stirring the dough w/a fork. Add just enough water so the dough will form a ball that is not sticky. Form two balls of dough. Lightly coat a countertop and rolling pin with flour. Roll out one ball of dough. Gently fold the dough in 1/2 the 1/4's. Lift into pie pan and unfold. Gently press dough into shape of pan. Trim of excess 1/2" of dough. Prick bottom and sides if pre-baking the crust. Bake at 450 F for 10-12 minutes or until crust is golden brown. DO NOT add too much flour. Your goal is to have a tender, flaky crust.

Jello Filling: Recipe on Jello package you buy in supermarket/retail store/grocery store/ Wal-Mart/wherever you go in Rexburg.

Cinnamon Rolls: 1 envelope active dry yeast+1 tsp sugar, 1/4 cup water (115*), 1 cup heavy cream, 1/4 cup evaporated milk, 3 egg yolks, slightly beaten, 3 1/3 cups flour, 1/4 cup sugar, 1 tsp salt, 1/2 cup butter. Stir yeast into water with 1 tsp sugar to dissolve. It should begin to foam or get bubbly. In a small bowl, mix together dissolved yeast, heavy cream, milk and egg yolks; set aside. In a large bowl, stir together w/a wooden spoon the flour, sugar and salt. Cut-in butter w/a pastry blender or two knives until mixture resembles coarse crumbs. Stir liquid mixture into the solid mixture. Set in refrigerator for 1 hour. Preheat oven to 375 degrees. Cut dough in 1/2 leave remainder in bowl. Put 1/2 in bowl back in fridge. Sprinkle flour on the counter and place your dough on top of it. Sprinkle a little flour on your dough; be sparing. W/rolling pin, roll into 1/4" thick rectangle. Melt 2 Tbsp butter in a custard dish in the microwave. Spread thy butter onto your rectangle w/a pastry brush. In another bowl mix together 1 tsp cinnamon, 1 cup white sugar (regular) and 1 cup brown sugar. Sprinkle sugar mixture on the dough evenly. Roll dough into a cylinder on the widest side, and then using dental floss or thread, cut into 2" pieces (rolls). Set rolls face up in a 9x9 square or round cake pan. Put the pan on the second level from the bottom in the oven. Bake for 20 minutes w/out opening door. Make icing (recipe will follow). Test if done w/a toothpick. If gooey stuff comes out, it still needs extra time.

Icing: 4 cups powdered sugar, 4 Tbsp's butter, 1 tsp vanilla, 1 cup heavy whipped cream, 1/2 cup brown sugar, 1/2 cup granulated sugar, 1/4 Tbsp cinnamon. Mix together well. Put on cinnamon rolls once done.
